12x 2014 Trellis Wines Syrah, Heathcote.
De-stemmed into open fermenters for wild natural fermentation. Hand plunged twice daily over 8 days. Left on skins for a further 7 days then pressed off. Matured in 2nd and 3rd use French Oak puncheons (500L) to minimise the influence of new oak characters. Sulphured in barrel after malo. Aged for 18 months, then racked out of oak to tank & lightly filtered.
